We have finally made it! I am delighted to introduce you to our new pages on French gastronomy. 

Sharing my experiences, will certainly not entail sucking 'frog's bones' or 'chasing snails' but mainly cooking and baking some 'hearty' food 'du Terroir' that you shall thoroughly enjoy around a 'convivial' table with your friends or family.

I must drop the 'A Bisto de Nas' approach as it happens more frequently when recipes have been passed down through generations, by just watching parents and grand parents in the kitchen. I shall translate it into more accurate measures in order for you to achieve the best results.

From 'Entrees' (starters) to 'Plat de resistance' (main courses) and of course our great 'Desserts', you will enjoy a blend of regional and traditionnal cooking primarily from the South West of France.

As winter settled in this year colder than usual, I have decided to start the Recipes book with our traditionnal 'Cassoulet'.

A recipe going back as far as the 'Guerre de Cent ans' (the hundred years war) where it is said that the extend of devastation in the Lauragais area of the South of France, left the remaining inhabitants with only beans and 'saucisses' remnants that they thrown into a earthen ware dish.....

Originating from Issel a small 'Lauragais' village in Aude Department, the 'cassoulet' was traditionally cooked in local earthenware called 'Cassole' hence its name.
